Patrica Wells Vegetable Harvest is a fantastic cookbook filled with more then just Vegetables.One of the most searched for recipes is the Poulet en Crapaudine a la Vinaigrette d'Echalote or Grilled Chicken with Shallot Vinaigrette. It was very easy and fast to make. You can alter it to make in the oven under the broiler. Just place the chicken on a roasting pan skin side up under the broiler for 15 minutes, then flip and another 15 minutes.
Meanwhile make vinaigrette with 1/2 cup Walnut oil, 2 Tablespoons Lemon juice, 12 sliced shallots and good quality sea salt. Place the finished chicken on the plate and spoon the vinaigrette and shallots over, cover with aluminum foil and let rest for 15 minutes....
serve and eat, it was excellent and very flavorful
